Summer is one of my favourite seasons, especially with the promise of longer evenings, warmer weather and hazy summer days blending into one. With it, comes one of my favourite summer activities – the great British Picnic!

Picnics are such a traditional British summer activity and something I’ve done every year with my family. When we were children, my siblings and I would pack up a hamper and tie up cutlery and crockery in tea towels. Then paddle down the stream in our garden, under the bridge to sit by the lake and eat our feast.

Picnics really don’t have to be difficult, and they’ve definitely moved on since my days of wrapping up sandwiches in tea towels. Ben and I have been lucky enough to enjoy many a picnic on Primrose Hill in the past few years, under some gorgeous warm summers. It’s given me a chance to develop my recipes, so I thought I would share with you three of my simplest, most delicious picnic recipes!

Goats Cheese, Mint and Nectarine Salad

(Serves 4)

You will need:

3 ripe Nectarines
1 Soft Goats Cheese block
A large handful of fresh Mint Leaves
1 tablespoon Honey

  • Slice the Nectarines and remove the stones
  • Tear Mint Leaves into individual Leaves
  • Arrange nectarine slices facing clockwise in a shallow bowl, layering a Mint Leaf between each slice
  • Slice up the goats cheese crumbling it onto your salad
  • Drizzle the honey over the salad to serve

Berry Meringues

(Serves 4)

You will need:

8 small Meringue Nests
4 large Strawberries
16 Raspberries
150ml Double Cream

  • Wash and slice the Strawberries into quarters
  • Wash the Raspberries
  • Whisk up the Double Cream OR (Life Hack if you don’t have a hand whisk) keep the double cream in its pot and shake it until you can’t hear it moving anymore and it seems to be solid
  • Arrange the Meringue Nests onto plates and spoon a generous helping of your whisked cream onto each
  • Arrange two Raspberries and two pieces of sliced Strawberry on each and serve

Pea, Spinach and Parmesan Gnocchi with Tomato Sauce

(serves 4)

You will need:

500g bag Gnocchi
500g Tomato Passata
Three table spoons shaved Parmesan
400g frozen Peas
200g fresh baby Spinach
A pinch of salt
A pinch of pepper

  • Bring a pan of water to the boil and add the Gnocchi
  • When the Gnocchi has all floated to the surface, drain and replace on the heat with a knob of butter in the pan
  • Pan fry gnocchi until golden brown then add the peas until cooked through
  • Add the Tomato Passata, half the Spinach and half the Parmesan
  • Add the salt and pepper to taste
  • Let the Gnocchi cool, then turn into your serving bowl and mix with the remaining spinach
  • Sprinkle over the remaining Parmesan to serve
