Silver Fox Cake

*Do not panic. I haven’t baked George Clooney.*

The Gentleman started his new job on Monday and I haven’t seen him since Saturday (the longest time we’ve spent apart since we moved to France) so I’m cooking him dinner! He’s continuously reminding me that I’ve never baked a cake for him, so this cake is dedicated to him. No Ben, I’m not saying that you’re going grey.

May I present to you the Silver Fox Cake. It’s silver, it’s sexy, it’s a classic and it’s more than a little bit naughty!


To make your own Silver Fox, you’re going to need;

4 large eggs
225g/8oz margarine
110g/4oz caster sugar
110g/4oz light brown sugar
6 tablespoons crème fraiche
170g/6oz self-raising flour
55g/2oz cocoa powder
a little pinch of salt

For the icing…

3 packets white chocolate fingers
Dr Oetker shimmer spray in silver
1 punnet raspberries
1 punnet blackberries
200g bar Dairy Milk Chocolate
100g icing sugar
50g butter
Enough raspberry/strawberry jam to spread in the centre of the cake

Start by preheating the oven to 180 degrees Celsius, butter and line two sandwich tins with greaseproof paper.

Put your margarine, caster sugar, brown sugar, crème fraiche and pre-beaten eggs into a bowl and whisk together using an electric hand whisk until combined and lighter in colour.

Sift together your self-raising flour, cocoa powder and salt and fold in to your mixture a third at a time.

Separate your mixture between the two tins and pop in the oven!

Bake for 30-40 minutes or until springy to the touch and a knife comes out clean. Wrap in cling film to keep the moisture in the sponge.

While the cake is cooling, prepare the icing;

 Pop the chocolate, butter and icing sugar with a splash of water into a glass bowl over a pan of boiling water. Stir while it melts, and leave to cool.

Take the bottom half of your cake and spread a layer of jam on top. Scatter half your raspberries over the jam and pop on the second half of your cake.

Take your icing and coat the cake with it, then grab your chocolate fingers and put them one after the other all the way around the cake.

Next, grab your silver spray and go wild. Unless you want your fruit to be silver too, spray the fingers THEN put the fruit on top!

Et Voila!

All you need is a single silver candle to finish it, then present it to the person of your choice. Or alternatively, you could just break into it yourself…
