BIG FAT American cookies

Everyone loves a nice BIG FAT American cookie (capitals for emphasis).

On a day when you’ve been out the night before and want nothing more than to cuddle up on the sofa with the puppy, an ice cold glass of milk and a warm gooey batch of cookies, this is the recipe you need.


Find yourself:

240g self raising flour (recipes normally say use plain but, pffft, this isn’t a normal recipe)
150g caster sugar
150g light brown sugar
225g unsalted butter
200g plain chocolate
1 tablespoon vanilla extract
1 egg
1/2 teaspoon bicarbonate of soda

Ready to bake?

Mix your butter and both sugars in a bowl until just combined.

Once they’re combined, beat in your egg.

Sieve your flour and bicarb into a separate bowl and then fold into your mixture a bit at a time.

Break your chocolate into chunks and stir into your dough.

Don’t let anyone eat all the dough before you get a chance to make the cookie balls…

Roll the dough into golf ball size amounts (keeping both eyes on your helper in case they scoff the mixture again)

Spread them out enough so that you don’t make one giant cookie… Unless you want to, I mean, that’s cool too.

Pop ’em in the oven at 180 degrees for 12-15 minutes

Just PLEASE do not have a reeeeally long Skype call and forget about the cookies.

Munch them all while they’re hot! I’ll be curling up with this little one and a BIG FAT plate of them!
